NuRaw Restaurant & Café is the on-site fine dining experience at Vayu Retreat Villas in Uvita, Costa Rica. Open to both hotel guests and outside visitors by reservation, NuRaw invites diners on a sensory culinary journey through one of Costa Rica’s most intimate and atmospheric dining settings on the South Pacific coast.

The restaurant proudly sources its ingredients from trusted local producers, artisans, and farmers within the Costa Ballena region and beyond — delivering a menu that evolves with the seasons, the harvest, and the chef’s creative inspiration.

The Chef — Steven Fernandez

NuRaw’s signature prix fixe dinner menu is led by head chef Steven Fernandez, a proud local and self-taught culinary talent. Steven masterfully blends comfort, harmony, and uncompromising quality in every plate, bringing the essence of Vayu to each dining experience. His philosophy: organic, ingredient-driven, farm-to-table cooking that honors the land and the people who cultivate it.

Dinner at NuRaw is an experience, not just a meal. The multi-course prix fixe format serves as a platform for Chef Steven to showcase his culinary vision. Highlights include:

Coffee Excellence

NuRaw serves only premium export-quality Costa Rican coffee, sourced directly from local farms in the region. The same roast destined for international markets — brewed fresh, served in paradise. Espresso, cappuccino, pour-over and more available daily.

How to Get There

NuRaw Restaurant is located inside Vayu Retreat Villas, approximately 4 hours from San José (SJO) via the Costanera Sur highway (Route 34), 3 km east of the main road. No 4×4 required.
